grilled cauliflower with turmeric

Wanderspice Sauce

  • 2 lbs vine-ripened tomato
  • .25 cup Kosher salt
  • 3 tbsp butter
  • 1 tbsp ground black pepper
  • 10 cloves crushed garlic
  • 6 lemons thin sliced
  • 4 sprigs thyme
  • 1 tsp chili flakes
  • 1/2 cup olive oil


  1. Using a large stock pot add olive oil and bring to medium heat

  2. After three minutes, add vine ripe tomatoes and crushed garlic

  3. Using a wooden spoon stir until tomatoes have broken down to a sauce.

  4. After five minutes add four sprigs thyme, ground black pepper, chili flakes and sliced lemons

  5. After five more minutes turn off heat and allow to rest for five minutes

  6. Remove lemons

  7. Add sauce to a blender and puree for two minutes, while adding butter

  8. Strain through a china cap or cheesecloth and serve hot.
