Using a large stock pot add olive oil and bring to medium heat
After three minutes, add vine ripe tomatoes and crushed garlic
Using a wooden spoon stir until tomatoes have broken down to a sauce.
After five minutes add four sprigs thyme, ground black pepper, chili flakes and sliced lemons
After five more minutes turn off heat and allow to rest for five minutes
Add sauce to a blender and puree for two minutes, while adding butter
Strain through a china cap or cheesecloth and serve hot.
